This page provides access to an archive of suggestions for preparing and preserving the food we grow here at Great Country Farms. Some of those suggestions are conventional recipes we found online, or at Forks Over Knives, or in PlantPure Nation; others are descriptions of the things we’re doing with the food we delivered to you. During the CSA season, we’ll add two or three new items to this archive every week, so visit often!
Garbanzos with spinach — Chick peas are the sort of food upon which you could build an entire civilization in some place like, say, the Mediterranean Basin, or the Shenandoah Valley. In fact, some people believe that a lousy chick pea harvest is what brought down the Roman Empire. (Not really.)
Beautiful beans — Food is a little like music: it attaches itself to people and places and moments, usually poignant ones, so you wind up eating to remember, and your memories season the food.
